Carrot udon
A featured product of Niiza which was created from the fusion of carrots which are a specialty of the region and the food culture of the region.
This is the specialty that represents Niiza, because it blends high quality carrots produced in Niiza and the local food culture, which is to welcome guests with handmade udon when people get together. The noodles are colorful, feel smooth and elastic, and have a light scent and the sweetness of carrots.
Carrots used for the noodles are cultivated by contracted farms in the City using compost of fallen leaves in Heirin-ji Temple. Carrots used for carrot udon are irregular shaped and out of standard and grated by hand. You can take approximately half of carotene that is required for an adult in a day by eating carrot udon for one person, because the ratio of carrot to flour is 30%.
